With extensive guidance from @spencerwong I’ve successfully modded and run 20 years-worth of ACCESS-ESM1.5 (with the reduced set of output variables). The outputs are sitting in my folder on scratch.
So for the next steps: are there guides/workflows somewhere as to how to
transfer the data from scratch to gdata, and more complicatedly
process the model output so it’s all nice and user friendly (like CMIP outputs)?
Sorry I had a quick poke around but couldn’t find anything.

There is some info on syncing in the docs
If you need access to short-term storage under /g/data you could approach the ESM Working Group as they have some resources available to researchers.
As for analysing the data, it’s usually good to avoid post-processing the data. If you don’t need specific CMIP compatibility then I’d suggest using intake data catalogues to simplify access to your data.
